Director of Food & Beverage

Department: Food & Beverage
Location: Chattanooga, TN

Job Summary: Supervise all food and beverage department associates.  Assist in development of menus and prices for all food and beverage items.  Supervise ordering, preparation, cooking and serving both restaurant and banquet tickets.  Direct kitchen personnel in all other areas.  Scheduling of F&B Department.


• Adhere to all Vision Hospitality Group, Inc. and property specific brand standards.

• Hire, train, develops and disciplines food and beverage staff.

• Coordinates work assignments, department planning, and schedules for F&B Department.

• Follows up and maintains food cost controls, methods and procedures.

• Creates and develops menu prices, beverage lists, and beverage prices, specials and is responsible for advertising, condiments, linens, uniforms, and decor use within the property.

• Standardized portions used, and is responsible for controlling of food, beverage, and labor.    

• Maintains a system of cost controls through purchasing and sales.

• Supervises preparation and set up of buffet lines and insures that it is maintained.

• Directs kitchen maintenance and sanitation program, insuring proper use of equipment.

• Adhere and maintain all Health Department rules and regulations.

• Controlling and maintaining labor costs in scheduling.

• Prepares cost and revenue reports.  Develops and maintains quality control procedures.

• Adhere to Vision Hospitality Group, Inc., as well as brand specific standards.

• Must be responsible for security of guests, fellow employees and hotel assets.

• Must be CPR certified, MSDS trained, Serving alcohol with care and have completed brand specific training programs.

• Must perform any other required duties as requested by the General Manager to aid in better  

• Operation of the hotel, restaurant, lounge, and service to the guests.

• Must assist during peak demand times including kitchen prep, cooking duties, setup, etc.

• Must assume line duties when department is slow to maintain cost controls.

• Keep confidential the business functions of the company including, but not limited to, financial status, customer/guest information, employee issues, etc.

Necessary Skills:

• Have a valid driver’s license and dependable transportation available.

• Must be able to communicate effectively by writing, telephone and personal meeting situations.

• Must be able to work a flexible schedule.

• Must be organized, honest, and work well with others, and have an outgoing personality.

Physical Requirements:

• Must be able to bend, reach, kneel, push, and stretch and lift and/or carry up to 25 pounds.

• Stand/walk on feet for 8 hours and work in a restrictive space/environment.

• Must have eyesight enabling vision both near and far.

• Finger dexterity for operating kitchen equipment and utensils, as well as, writing.

• Must speak in a clear, understandable voice and hear at a basic level, and understand English.

• Must be able to handle heat and stress.

• Must be comfortable using a step stool or ladder.

• Must be able to use/lift arms for up to 8 hours.
